Mini Cinnamon Buns

I made these the other night for my family, they were a huge hit! :)

Mini (no yeast) Cinnamon Buns
  • 1-8oz tube crescent roll dough
  • 2 Tbsp butter, melted
  • cinnamon
  • brown sugar
  1. Preheat oven to 350F degrees (or whatever your tube of crescent roll instructs). Spray 16 tins of a mini muffin pan with nonstick spray. Set aside.
  2. Flour your counter surface to prevent sticking, roll out half of the dough (4 triangles) and close the seams together by pinching. Flip over and pinch those seams together as well.
  3. Smooth out the seams with a rolling pin OR cover the dough with parchment paper and roll over with a glass cup. You want the dough to be totally smooth and 1/4″ thick.
  4. Brush with 1 tbsp melted butter and sprinkle with brown sugar and cinnamon. Use as much or as little as you prefer. Roll into a log and cut into 8 equal buns.
  5. Repeat steps 2-4 with the other half of the crescent roll dough.  Place 16 buns into the prepared muffin tins. Bake for 12-14 minutes or until the buns are lightly browned.  Allow to cool for about 5 minutes and spoon icing over top each bun.

Let's Talk...

I feel so bad, I have been such a flake with posting recently and the past month is when I should have been really focused on getting out content, because.... My summer classes started this week. And they are intense. Like, more so than I expected and I'm only a week in. Also, I just got my Summer schedule for the daycare I work at, and instead of my normal 9:30-5:30, I was switched to  6:00-12:30 ...  That is a huge difference, I've never gotten up that early in my life!  It is a lot better in some ways because I now have my full days free, but it's a difficult sleep schedule to get used to.   As a result, I've been spending my mornings at work, and my evenings doing homework, or attempting to have a social life...  This is my last Summer before college after all, so I want to have fun!  But it just makes things more difficult when I need to be in bed early for work, balance homework, and then there is this blog. I love having this...

What I Did This Month... November

This has been a month of quite a few firsts... I got my first job!! I am working at a daycare with kids ages 2-12 in the afternoons after school. I am really liking it, and I don't have to work weekends or Holidays so is is great! And then I got my second job... Back in the Summer I asked my cousin about having a job in his clothing store, and he told me that I could be a gift-wrapper closer to the Holidays. So I am doing that on Saturdays! I mean, I'm not complaining (much), I am making good money! But oh my gosh... I have been so tired! I started out the month making Triple Salted Caramel Cupcakes for my Mommy's birthday! The next semi-interesting thing I did this month was go to my neighbor/sister(sort of) wedding! I was a Guest Book Person/Dress Fluffer and Holder/Unofficial Bridesmaid... In all reality I have absolutely no idea what I was! But it was a pretty wedding, and we had fun :) This was her getting her hair done... Her and her (now) husband dec...
